As the Austrian Alps warm they offer a multitude of aromas and colors. A forest walk leads to unexpected clearings redolent of grasses, herbs and wildflowers in full bloom. The bright spruce aroma overhead and earthy fir needles meld with the soil underfoot. Brushing along bushes and ground cover brings an intense burst of fragrant herbs and ripe blackcurrant berries warmed by the sun. This tea offers a majestic aromatic journey.

📝 Blender's Notes

This fresh black tea blend evokes forest bathing in the Alps. It's an update of an earlier tea blend of the same name.

This blend emerged from the idea of a tea that captured the essence of a forest and prairie walk among the herbs and berries and sweet earth. It's got a lovely bouquet of dark berries like juniper and blackcurrant alongside rosemary, thyme and cornflower. There is a very light touch of pu'erh for some extra depth. If you are unfamiliar with pu'erh tea, it is a special fermented black tea that is prized for digestive and other health properties.

For our 2024 version, I decided to soften the herbaceous and earthy flavors by adding honey granules. It is not a sweet tea to my tastebuds.

This tea is an aromatic spa experience. Lovers of wildflower honey, juniper and gin will appreciate this flavor.

There are those who will shy away from this tea for its juniper, the pu'erh, or the herbs. I've tried to strike a lovely balance where no ingredient dominates. My hope is that this blend will be a delightful experience for anyone who's looking for a truly unique flavor..

I'd love for you to try it hot and iced. Add a splash of your favorite milk. If you're inclined to add more honey, please do. This is a blend that defies the usual flavor categories found in tea. It's a lot to ponder in each sip.

🔥 Brewing Directions and Recipes

Hot Brewing 10 oz

  • Heat 212°f/100°c water
  • Add 3.5g tea, about 1 tablespoon
  • Pour 10oz/300ml hot water
  • Infuse 4-5 mins. Longer is stronger.
  • Repeat Reinfuse 1-2 times

Iced Brewing 10 oz

  • Heat 212°f/100°c water
  • Add 3.5g tea, about 1 tablespoon
  • Pour ~3oz hot water to barely cover tea leaves
  • Infuse 4-5 mins. Longer is stronger.
  • Dilute with 7oz cold water
  • Serve Over ice

Pro tip: If you want more concentrated flavor, try doubling the tea leaves in this recipe.

Ok, but more earthy than expected

The aroma is divine as usual. I was expecting a lightly sweet, floral yet bold, black tea and while I tasted most of that, I also tasted a little too much earthiness. I think it's the thyme that throws off the flavor for me. I was definitely reminded of a field, which is in the name, so I get the picture and the feel they were going for. This type of sweet and earthy mix just wasn't for me.

Lovely!

Simply opening the bag is such a treat! The floral notes are immediately apparent. I don’t think I’ve ever enjoyed the aroma of a tea as much as this one. Brewing does cause the aroma to fade a bit, but it is still a lovely experience. Perfect for a quiet morning or after dinner. I definitely enjoyed this one.

Opinion changed the more I had of it

Honestly, when I first tried A Field In Innsbruck I had the same reaction many of the other reviews had, that it was too much rosemary and piney tasting. However, after multiple cups throughout the week, I felt as though I was getting more of the berry/honey flavor I was originally expecting and that tasted fantastic! I’m giving three stars for now because I initially thought it had too much rosemary/thyme flavor, but once I got halfway through the bag, the flavor profile changed and was much more enjoyable. So I’ll have to give this tea another try soon to see if it was just that bag. My only suggestion would be to dial back the rosemary/thyme and let the juniper berry and honey flavors shine through a bit more with just a hint of rosemary. But overall, I enjoyed it the more I had of it.

Evocative and herbaceous

The flavors of this tea are balanced. It’s lovely and pretty mellow. The aroma as you life the cup to your mouth is where it gets me through—the rosemary that lifts and surrounds, making me feel like I’m walking through an evergreen forest in the snow. The aroma of this tea is positively transcendent for me.

Not exactly what I expected, but not bad. Very herbal!

This smells lovely and a bit sweet. You can really smell the black currant and honey with a hint of the juniper. However, I feel like the smell doesn't reflect the taste very well. I struggled a bit with finding the right brew time/amount/etc. to fully enjoy this. At first, I did my standard 5 min for black tea and 1.5 spoons of the tea with a splash of almond milk. This felt a little bitter, and the almond milk seemed to overpower the other flavors. So, then I tried it straight and 5 min of brew time. Sadly, it was still a little a bitter, but the flavors came through more. However, I really wanted that milk to soften the herbs. So, I tried 4 min and a tiny splash of almond milk. In the end, I haven't found the right combination for me. I will say, it certainly does evoke a forest feeling. The heavy herb taste makes it feel like a cool morning in November. I don't typically put sweetener in my tea, but with this I wonder if a little extra honey might help bring out the other flavors.

Overall, I'm really torn about this one! On paper, this tea is full of flavors I enjoy. But the overwhelmingly herby taste was not really for me. I am a huge herb and spice lover. However, it's easy to for those flavors to overpower everything for me. I think if this tea is ever re-released with a bit less thyme and rosemary, maybe a bit more honey, this could easily be a favorite. I think if I was to pin down an expectation vs. reality comment: by the description I was expecting this to taste…
