Hot Brewing 10 oz

Heat 212°f/100°c water
Add 3.5g tea, about 2 teaspoons
Pour 10oz/300ml hot water
Infuse 4-5 mins. Longer is stronger.
Repeat Reinfuse 1-2 times

Iced Brewing 10 oz

Heat 212°f/100°c water
Add 3.5g tea, about 2 teaspoons
Pour ~3oz hot water to barely cover tea leaves
Infuse 4-5 mins. Longer is stronger.
Dilute with 7oz cold water
Serve Over ice

Drinking a cookie

This tea - Biarritz - and the Know By Heart tea are both like drinking a macaroon. They both are sweet treat teas that have that almond cookie flavor. Biarritz is caffeinie free and has a stronger cherry note than Know By Heart, which I think tends to lean more towards the cookie note of a macaroon. Both teas are absolute winners. I would put them as my top favorites of all the August Uncommon Teas. I can't believe I even like Rooibos tea from this brand because I never liked it before! Note: I use organic coconut syrup or organic light agave syrup to sweeten these teas instead of honey so that the flavor of the tea is not altered by the honey taste.
